Chicken Parmesan Wonton “Cupcakes”

Chicken Parmesan Wonton "Cupcakes"

Fun finger food that will have them licking their fingers! Plus a great variation--Buffalo Chicken Wonton Cupcakes

  1. 2 cups cooked boneless, skinless chicken breast, diced small or shredded
  2. ¾ cup pasta sauce of your choice
  3. ¾ teaspoon Italian seasoning
  4. 16 wonton wrappers (typically found in the produce section)
  5. 1 cup (4 oz) shredded 2% Mozzarella cheese
  6. 0.5 oz seasoned croutons, crushed into pieces of varying sizes
  7. 2 teaspoons grated Parmesan cheese
  1. Pre-heat the oven to 375.
  2. Lightly mist 8 cups in a muffin tin with cooking spray and set aside.
  3. Combine the chicken, pasta sauce and Italian seasoning in a medium bowl.
  4. Stir to combine until fully mixed.
  5. Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin.
  6. Using about half of the chicken mixture, spoon evenly into the wonton wrappers.
  7. Sprinkle about half the Mozzarella cheese evenly over the top of each cup.
  8. Press another wonton wrapper on top and repeat the layering steps with the remaining chicken mixture and Mozzarella.
  9. Mix together the crushed croutons and Parmesan in a small dish and sprinkle the mixture evenly over the top of each cup.
  10. Bake for 18-20 minutes until golden brown.
  11. Let cool 5 minutes before removing from muffin tin.
Once you try this, you'll think of other combinations that will be equally as easy and tasty. For example, Buffalo Chicken Wontons
  1. 1 lb skinless chicken breast-cooked, and shredded
  2. 8oz Ken’s LITE blue cheese dressing
  3. 8oz Frank’s Red Hot Sauce
  4. 1 pack 1/3 less fat cream cheese
  5. 1/2 cup shredded reduced fat mozzarella cheese
  6. Mix and layer as above. Enjoy!!
